Microstructure of pectin fractions
Description
In our work, we use multiple pectin sources - apple, carrot, strawberry, onion etc. - as well as its various fractions – extracted with water, imidazole, CDTA, diluted alkali etc. Notably, water-soluble pectin predominantly contains small pectic polymers, while diluted alkali-soluble pectin forms organized networks with a distinct angular structure. It is within these intricacies that we uncover the beauty and practical applications of pectin.
