Determination of peptide antioxidant activity by DPPH method
Description
DPPH is a dark purple prismatic crystal that appears dark purple in anhydrous ethanol solution, and the DPPH - radical has a strong absorption peak at 517 nm in the visible region. In this method, the characteristic purple colour of DPPH - radical disappeared to colourless or light yellow by the pairwise binding of one stable DPPH - radical provided by DPPH with one electron provided by the antioxidant peptide, and the absorbance after the reaction was measured by UV-visible spectrophotometer.
